Mark Gowen describes a broad family dynamic spanning the Italian Riviera, Tuscany and Wales, with a rich culinary heritage. He’s an eclectic man, which resonates hugely with me, also having a shared love of beautiful ceramics and a Welsh-Italian lineage. Gowen studied Italian cinema, the inspiration for the title of his book, which is indeed magic. I like the lack of pretention. This is refreshing in the food world which has more than a whiff of highfalutin. The author has captured his own genuine, beautiful images that fill the pages, touching on the history of pasta, reminding the reader how Italian food is taken for granted, and its relatively recent history in the UK. Gowan talks with love and passion about the art of sauces and oils, how combinations with pasta can transform into a variety of dishes, which he presents as a series of stunning and practically arranged recipes. I particularly like the way in which he de-mystifies Italian food – how the simple Carbonara just needs a light glaze, opposed to ‘gallons of custard’ and the great ‘spag bol’/ragu narrative, while deliberating on everyone’s obsession with being authentic, when ‘authentic’, is many different things to many different people. I imagine I will be reaching for this book a great deal as it is packed with wonderful recipes and charming anecdotes. It’s a must for lovers of pasta, or anyone interested in learning more about Italian cuisine, its origins and societal heritage.

From simple & affordable meals containing only a few tasty ingredients, to more hearty recipes, this book will certainly be jazzing up my mealtimes for months to come.

Pasta and Magic Oil Sauces by Mark Gowen is hands down one of the most inspiring and rewarding cookbooks I’ve added to my kitchen shelf. If you love authentic recipes and aren’t afraid to get your hands a little floury, this book is for you.
The instructions are absolutely fabulous — clear, detailed, and filled with little tips that make even complex recipes feel totally doable. Gowen’s writing is approachable and full of passion, which really brings each dish to life.
The photography? Stunning. Every page feels like a scene from a rustic Italian dream — rich textures, vibrant dishes, and warm, natural light that makes you want to cook everything right now.
One recipe that truly stood out was the Pici with Garlic and Pangrattato. It’s simple, yet absolutely stunning. Just a few ingredients — pasta, garlic, and golden breadcrumbs — but the flavor was incredible. It’s a perfect example of how this book takes humble ingredients and turns them into something magical.

I was lucky enough to receive an Advanced Reader copy of the book. Pasta & Magic by Mark Gowen really surprised me in the best way. It is not just about recipes but also feels personal and thoughtful. The plate collection photos were a lovely touch (my partner and I also collect plates that remind us of different times in our lives), and the old family photos added real warmth. Learning about the author’s Italian roots and background made me trust his approach even more.
I also appreciated the clever use of QR codes for online videos, so I do not have to splash my nice book while cooking.
The book is packed with excellent details on techniques, explaining where they come from and when to use them. The variety is fantastic, and some recipes even use ingredients I had never tried in pasta before, such as coffee, beer, and juniper berries.
Even though this is just “Part One,” there are so many recipes. I thought I would choose one to make tonight, but with all the options available I may need to plan an entire pasta week. The photos are gorgeous and made me genuinely hungry. The author makes it clear that he is not a professional chef, but he has managed to present everything in a very appealing and accessible way.
I highly recommend this for anyone who loves pasta and wants to expand their horizons in the kitchen.

Just finished reading the advanced reader copy of the book. Wasn't sure that I'd expect from a receipt book written by someone I'd known briefly at school. Well he looks to have spent his time more wisely on writing, cooking and photography than I have.
This book reads more like a romance than a cookbook, aa least its not like the ones I've been gifted over my life at Christmas and the like. The author's love of pasta clearly shines through and you are taken on a guided tour of the food. Particularly like the way that he shares his gained experience, and goes out of his way to write for home cooks.
Photos are stunning especially given they are examples of the meals he has prepared for his family. I think this book is a work if art and the best part. It's the 1st of 4 volumes.
Well played sir, well played

I'm so glad I've received an advanced reader copy of Mark's cookbook, it is absolutely phenomenal.
The photography is stunning, and it must be one of the most aesthetically pleasing cookbooks I've set my hands on.
It is full of stories about the dishes and the culture behind them, full of technical tips and wonderful anecdotes.
The fact that Mark isn't a professional chef and has managed to create something this exceptional is a true inspiration, and certainly says a lot about the quality of his recipes.
Now for the recipes - they are incredible! You'll find everything from a simple 2 ingredient classic Italian sauce, through contemporary recipes, to some wonderfully odd British-Italian combination that made my mouth water. I was so excited about the spaghettoni with haggis and roasted tomatoes!
Some of the other favourites include coffee tagliatelle in white pork ragu (what an idea!) and sagne torte with broad bean macco and grilled octopus.
Plenty of ideas for everyone, and you don't have to be a fancy experienced chef to enjoy this one!
10/10, truly well done, Mark!
