The classic ‘nduja and fileja combination is definitely one for the ‘nduja purists and heat lovers, as it can very easily reach rocket fuel levels of heat. Fileja are really quite unique - a shorter pasta that has the bite and feel of a longer shape. If you can't find any locally try casarecce or busiate.

INGREDIENTS
FOR FOUR PEOPLE
1-2 tblspns ‘nduja (Delizie Vaticane)
Pangrattato, pecorino to taste
PASTA 500g
Fileja / Casarecce
MANTECATURA (?)
none to light

METHOD
Start by preparing some pangrattato (see Technique section). Boil and cook your fileja (busiate or casarecce are an acceptable substitute if you can’t find fileja). In the meantime, in your pasta wok, met a large tablespoon of ‘nduja on a low heat with a small amount of cooking water. Don’t let it fry. Just let it melt then set it aside.When it’s just past al dente, fish the pasta out and combine with the melted ‘nduja in your tossing pan, with perhaps a small amount of cooking water from the pasta. Don’t let the pasta coating get too starchy; go velvetty, not wallpaper paste. Light to no mantecatura.

NB ‘nduja can vary a lot in its spiciness - with experience you’ll get to know how much of your favourite brand to use - if you’re not sure start with perhaps 3/4 of a tablespoon - and maybe try some out on some crusty bread before using it on pasta! Serve immediately with the pangrattato sprinkled on the top, and pecorino if you want some cheese too. The variation below is with added mushrooms, which soften the full-on heat of 'nduja!
