orecchiette with sausage and friarielli

Similar to the classic "Cima di Papa" recipe for orecchiette, with sausage!



WHAT YOU'LL NEED TO DO

  • cook the sausage meat

  • make some pangrattato

  • chop and warm the friarielli

  • boil and cook the pasta 

  • combine pasta with ingredients

INGREDIENTS

FOR FOUR PEOPLE

  • 1 large garlic clove

  • 600g jar friarielli (D’Amico)

  • 400g sausage meat

  • handful of crushed pistacchio nuts

  • pangrattato

  • cayenne pepper

  • ricotta salata or pecorino to taste

PASTA

500g fresh orecchiette (Martimucci)

METHOD

Decide if you want to serve this dish with pangrattato - if so, make some now.


Begin by frying the sausage meat in EVO and a splash of white wine. Let the sausage colour but not crisp too much. Drain any excess fat and set aside. In your sauce wok, crush and fry the garlic on a low heat in some EVO but don’t colour at all. Chop the friarielli (from the jar) finely and toss with the garlic briefly. Remove from the heat and cook the pasta.

If you’re going for any more than a light mantecatura you’ll need to remove the orecchiette from the cooking water when they are still al dente and transfer them to the sauce wok, with a little cooking water, where you can finish cooking them. Throw in the sausage meat too and toss and combine until you’re happy. Plate each portion with a sprinkle of pistacchi, some pangrattato and serve with cayenne pepper and pecorino.
