maccheroni with chicken and beer ragù

This sauce  is based on a reasonably pipular Roman way of stewing chicken, in beer and with celery. The sweetness of the celery combines wonderfully with the bitterness of the beer - though I would always advise using a paler ale or lager.

INGREDIENTS

FOR FOUR PEOPLE

• 2-3 chick thighs on the bone

• 3-4 celery sticks

• 1 clove garlic

• lager

• 2 handfuls green beans

• chicken stock

400g dry maccheroni / rigatoni

METHOD

Begin by chopping the celery, onions and garlic and frying them gently in EVO, as you would for any other meat ragù.


After a few minutes and the chicken thighs, still on the bone. Pour in the beer so that the chicken’s covered and bring everything to a gentle simmer.


Crumble a chicken stock cube into the mixture and allow it all to simmer for 45-60 mins, untill the met can be easily pulled away from the bone. Do that and discard the chicken skin, then reduce, if need be, so that you sauce reached the consistency of a tomato-based meat ragù.

As you begin to boil the water for the pasta, boil  a few handlfuls of green beans and then cut them into short lengths as you boil the pasta.


When the pasta’s done to your liking, fish it out of the boiling pan and transfer it to a tossing pan with perhaps a ladle or less of pasta cooking water. Toss to combine, adding more sauce, the beans, and loosening it with more tiny amounts of cooking water, as required.


Serve with freshly grated black pepper and parmigiano.
