spaghetti with vongole and cherry tomatoes

A variation of the recipe for SPaghetti with Vongole but with tomatoes - not a thick tomato sauce base but instead flash-fried cherry tomatoes - and extra heat from fresh chillis.

WHAT YOU'LL NEED TO DO

• purge the clams (4-6 hrs)

• peel the garlic

• chop the parsley

• cook the chilli

• flash-fry the tomatoes

• cook the clams

• boil and cook the pasta

• combine and plate

INGREDIENTS

FOR FOUR PEOPLE

• 1Kg (2.2lb) fresh clams

• 1/3rd glass of white wine

• 1 large garlic cloves

• 2 large handfuls cherry tomatoes

• 2 tblspns EVO

• fresh parsley

• fresh chilli

400g (14oz) dry spaghetti

METHOD

Begin by discarding the chilli seeds and slicing it into small strips (see left). Fry in really gently in EVO for no more than a few minutes, really just to warm it through and allow it to soften a little. Tear the parsley with your hands in to small pieces. Cut the tomatoes in half.


And now lots of thing need to happen at once. Boil the water for the pasta, add it, and bring it back to the boil.


At that point follow the instructions for cooking the clams in the previous recipe and as they are cooking heat another frying pan to a very high temperature and flash-fry the tomatoes, tossing them, in some EVO.

As the clams cook they open their shells - discard any which don’t open. When it looks like most have opened and, assuming the pasta has reached the just past ‘al dente stage,’ add the pasta to the clams in a tossing pan. Add the tomatoes and toss once again.


Plate with chilli and parlsey on the top.
