There’s absolutely nothing wrong with cheating if you’re in a hurry and you know you’ve got great taste and ingredients in what comes ready made, so by all means use shop-bought black olive tapenade.... but if you do fancy having a go and doing this dish from scratch, start with approximately the proportions of ingredients I’ve listed on this page. And be prepared to wait to roast the tomatoes.

INGREDIENTS

FOR FOUR PEOPLE


approx 300g (10.5oz) baby plum / cherry tomatoes


PESTO

  •  approx 80% black olives

  • 10% sun-dried tomatoes

  • 5% capers

  • 5% pecorino

  • pinch of cumin


PASTA

400g (14oz) dry linguine

METHOD

Roast 300g of any variety of small vine tomatoes, still on the vine if possible, in a little olive oil and a pinch of salt for about 15mins in an oven that you’ve preheated to 200’ / Gas Mark 6. When they’re cooked, remove the tomatoes and set aside.


While the tomatoes are roasting make the olive pesto by putting small amounts of each ingredient in a blender with some EVO. Begin by pulsing the blender. Repeat. Taste. Remember to use a pinch of cumin in total, don’t put a pinch in every time you put some of each of the ingredients into the blender! Stop when you’ve reached the balance of flavours that you like.

Boil the spaghetti and when they’ve just past ‘al dente,’ fish them out of the Boiling Pan and put them into a pre-warmed Sauce Wok with perhaps half of your pesto, plus some cooking water from the pasta. Mix and combine the pesto with the pasta until it’s nicely coated, then add the tomatoes, very delicately folding them through the pasta. Serve immediately with cayenne pepper and pecorino.
